Beef tartar, shallot, spicy horseradish, lime and ginger - swordfish garum

Ingredients for 4 people:

500g veal loin in small cubes
80g chopped shallot
20g capers
20r chopped parsley
Zest and juice of 1 lime
10g ginger
10g spicy horseradish
1 tbsp of mayonnaise
1 tbsp of mustard
1 tbsp of swordfish garum
Black pepper, as needed

Method:

1 - Place all ingredients in a container and wrap.
2 - Rectify the seasonings. If necessary, add salt or more garum.

To finish...

1- Serve tartar with some homemade toasts and cornichons.
