500g veal loin in small cubes 80g chopped shallot 20g capers 20r chopped parsley Zest and juice of 1 lime 10g ginger 10g spicy horseradish 1 tbsp of mayonnaise 1 tbsp of mustard 1 tbsp of swordfish garum Black pepper, as needed
